Might be a dumb question, but how do i check to see if i am only going through opennic root servers, and not IANA root servers and opennic root servers as well. And how do i check to see if i can see all opennic tlds.

Actually you were right the first time... You want to AXFR the root zone
so you get a complete copy of it.  If you just query for NS records, you
get a list of the accepted nameservers, but you don't have your own
complete local copy of the zone.
