Although I specifically asked about hosting companies (meaning shared hosting), I am thankful for the info about how others on the list tackle the problem I was trying to solve using VPS, etc. If that's the common way of doing it, it's probably a better way than what I was imagining.

You're not going to be able to use Let's Encrypt
with OpenNIC domains,  
they  
don't support our namespace.
